As you should probably know by now, I love baking! However, as I'm baking cupcakes most of the time, I'm not that experienced when it comes to real cakes. Thankfully I did quite a good job with this one, which I baked for my dad on Fathers Day. He and the rest of the family loved it. This cake tastes so delicious, light and fresh (and no, I don't go overboard when saying that). Therefore I decided to share the recipe with you.
What you'll need:
for the cake:
150 g melted butter
175g granulated sugar
1 pkg vanilla sugar
a pinch of salt
3 eggs
150 g cream cheese
225 g wheat flour
2 ½ tsp baking powder
a bit of lemon zest
for the frosting:
250 g quark
2 pkg vanilla sugar
a bit of lemon juice
400 g heavy cream (cold)
1 banana
strawberries
Instructions
1. Coat the cake-pan with butter and preheat the oven to 180°C (bottom/lower heat)
2. Mix the butter in a mixing pan until it's smooth. Add sugar, vanilla sugar, lemon zest and salt until everything is mixed together well. Add each egg individually and mix for about half a minute. Stir the cream cheese in. In a separate bowl mix the flour with the baking powder and add that in two steps. Spread the cake batter into the cake-pan. Let the cake bake for about 60minutes in the lower third of your oven.
3. Remove the cake from the pan and let it cool completely
4. Cut the cake twice and put the bottom part on a plate
5. Wash the strawberries and cut some of them in half or quarters. Cut the banana in slices.
6. Whip the heavy cream until it's stiff.
7. In a separate bowl mix the quark with the vanilla sugar and the lemon juice.
8. Fold the heavy cream in with the quark mixture. Then separate it in three parts.
9. Spread one part of the quark mixture on the bottom part of the cake. Then add half of the strawberries.
10. Add another cake layer and spread the next part of the quark mixture. Add the banana slices.
11. Add the final cake layer and spread the rest of the quark mixture. Add the rest of the strawberries. You can sprinkle a bit of powdered sugar over it if you want.
